Ingredients:
4 large carrots, scrubbed, cut into 1-inch chunks
3 large Yukon gold potatoes, cut into 1-inch chunks
3 large beets, peeled and cut into 1-inch chunks
2 large shallots, peeled and coarsely chopped
½ cup olive oil
2 tablespoons fresh orange juice
1 teaspoon orange zest
2 tablespoons Za’tar spice
1 teaspoon sea salt
freshly ground pepper
Directions:
- Preheat oven to 375 degrees. Toss carrots, potatoes, beets, and shallots with the olive oil, orange juice, orange zest, Za’tar, and salt. Spread on a parchment paper lined baking sheet.
- Roast 35-45 minutes until vegetables are tender, but still firm.
