Ingredients
3 tablespoons grape seed oil or olive oil
2 tablespoons lemon juice
1 teaspoon honey
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
3 cups shredded, peeled beets (2-3 medium)
1 cup shredded carrots (2 large)
1 cup grated firm pear (1 medium)
1-2 scallions, thinly sliced on the diagonal
Directions:
1. Whisk oil, lemon juice, honey, salt, and pepper in a large bowl. Add beets, carrots, pear, and scallions. Toss to coat well.
Serves 4 (1 cup each)
