Ingredients:
¼ cup quinoa, washed and strained, and rinsed twice
½ cup parsley, roughly chopped
½ cup basil, roughly chopped
1 small cucumber, seeded and diced
1 teaspoon olive oil
sea salt and freshly ground black pepper

Directions:

  1. Combine the quinoa and 1½ cups water in a 2-quart saucepan over high heat. Bring to a boil, cover, reduce the heat, and simmer 10-12 minutes, until all the water is absorbed. Drain and run under cold water, drain again.
  2. Toss in the remaining ingredients and serve.
