Ingredients:
4 cups cooked brown rice
2 cups grated carrots
½ cup finely chopped spring onion
1 teaspoon ground cumin
1 teaspoon ground ginger
¼ cup fresh lemon juice
A bit of maple syrup, if needed

Directions:
1. Combine all ingredients and mix well. Taste for seasoning. Add a few drops of maple syrup if you need it sweeter. Toss to combine. Refrigerate until ready to serve as a salad.
2. I like to serve this in lettuce cups.
